Brazilian barbecue

Barbecue emerged in the south of the country 300 years ago.

The ASSADOR was the one who prepared the meat, who understood the cuts, knew the materials, the knives, the grills and even the best ground to stick the wooden skewers and start grilling. Barbecue back then was made anywhere, only by experts, who passed on their knowledge to their children and grandchildren.

In the spacious glass-enclosed dining room or the outdoor area, the view of Guanabara Bay with the Sugarloaf Mountain in the background competes for attention alongside around twenty types of grilled meats. These are served via a rodízio system at the tables.

Standout skewers include items such as shoulder steak (the central part of the beef shoulder, as tender as filet mignon), tomahawk (a prime cut of rib served on the bone), lamb chop, crispy roasted piglet, all accompanied by fried rice, egg farofa, bloomed onions, fried polenta, and more than ten types of salads.

Seafood and vegan options are also offered.

Italian cuisine

Bota, the destination that combines the rich tradition of Mediterranean Italian cuisine with the charm of Brazilian seasonal products. Set in a stunning location at Marina da Glória, this culinary treasure awaits to captivate your senses and take you on a unique and passionate experience.

Here, the principles of cooking come to life in each dish, and the magic begins with the careful selection of ingredients from family farms, where authentic flavors blend with the seasonality of nature.

In his first restaurant as a partner, chef Joca Mesquita of Aguce Gastronomia consultancy points to the Italian coastline with his knives but also leaves room for local ingredients and other seafood preparations. Organic and artisanal foods are the essence of his kitchen, conveying a love for gastronomy in every bite.

Grilled octopus and spicy Calabrian potatoes seasoned with chili paprika, inspired by Spanish cuisine, made for a good start. Another successful dish is the Bota risotto, which features large shrimp, artisanal charcuterie, mushrooms, grilled vegetables, and crispy onions. The wine list is curated by expert Danio Braga.

Seafood and vegan options are also offered.

Argentinean cuisine

The Argentine-style preparation sets the tone for the house, whose name is inspired by a famous tango by Carlos Gardel. Prepared on the parrilla, the meats follow the traditional Portenho style, starting with the cut that ensures tenderness and juiciness. The restaurant offers premium cuts of meat, carefully selected from the best breeds and farms, prepared with mastery.

The menu reflects the founder Eduardo Santalla’s mission, who in 1997 in São Paulo, decided to faithfully reproduce the flavors of his homeland. The six types of empanadas compete for attention alongside the provoleta parrillera, grilled provolone cheese.

Specialties like ojo del bife, the tenderloin; bife ancho, the ribeye; and lomito light, filet mignon with garlic and grilled pineapple, are complemented by a good variety of potatoes, such as papatasso, crushed and fried with oregano. To finish, the classic dulce de leche, served in a bowl, is a must.

Asian cuisine

Known as the first sushi chef from Rio de Janeiro, Nao Hara has over thirty years of experience dedicated to Asian cuisine. Located at a restaurant framed by Guanabara Bay, the chef goes beyond, introducing influences from Malaysia and India, for example.

The menu offers an orient-inspired degustation, allowing guests to enjoy a five-course meal with options such as crispy duck, chicken satay, scallop sashimi, sushi bar selection, pad thai, and banoffee for dessert.

To complete the journey, the cocktail list curated by mixologist Fabian Martinez combines Asian and Latin flavors. The Dragon King, for example, is made with chili-infused vodka, mango reduction, guava, and lemon.
